- 2 ½ pounds boneless skinless chicken thighs (about 6–8 thighs)
- ½ cup pure honey
- 3 tablespoons chipotle peppers in adobo sauce finely chopped (plus 1 tablespoon adobo sauce)
- 4 cloves garlic minced
- ½ cup low-sodium chicken broth
- 2 tablespoons apple cider vinegar or fresh lime juice
- 1 tablespoon olive oil
- 1 teaspoon smoked paprika
- 1 teaspoon ground cumin
- ½ teaspoon onion powder
- ½ teaspoon salt adjust to taste
- ¼ teaspoon freshly ground black pepper
- Optional: 1 tablespoon cornstarch + 2 tablespoons water for thickening sauce
- Fresh cilantro for garnish
- Lime wedges for serving
Step 1: Prepare the Chicken
Pat the chicken thighs dry with paper towels. This helps the seasoning stick better. Lightly season both sides with salt, pepper, smoked paprika, cumin, and onion powder.
Step 2: Make the Honey Chipotle Sauce
In a mixing bowl, whisk together honey, chopped chipotle peppers, adobo sauce, minced garlic, chicken broth, apple cider vinegar, and olive oil. The sauce should smell smoky, sweet, and slightly tangy.
Step 3: Layer in the Crockpot

Cover and cook on low for 4–6 hours. I strongly recommend cooking on low rather than high. Slow cooking gives the honey time to meld with the chipotle and prevents burning.
The chicken is done when it reaches an internal temperature of 165°F and easily shreds with a fork.
Step 5: Thicken the Sauce (Optional but Worth It)
If you prefer a thicker, stickier sauce, remove the chicken and set aside. Whisk cornstarch with water and stir into the sauce. Turn the crockpot to high and cook uncovered for 10–15 minutes until thickened.
Return the chicken to the sauce and spoon it over the top.
