Ingredients
  

  • 2 ½ pounds boneless skinless chicken thighs (about 6–8 thighs)
  • ½ cup pure honey
  • 3 tablespoons chipotle peppers in adobo sauce finely chopped (plus 1 tablespoon adobo sauce)
  • 4 cloves garlic minced
  • ½ cup low-sodium chicken broth
  • 2 tablespoons apple cider vinegar or fresh lime juice
  • 1 tablespoon olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground cumin
  • ½ teaspoon onion powder
  • ½ teaspoon salt adjust to taste
  • ¼ teaspoon freshly ground black pepper
  • Optional: 1 tablespoon cornstarch + 2 tablespoons water for thickening sauce
  • Fresh cilantro for garnish
  • Lime wedges for serving

Instructions
 

Step 1: Prepare the Chicken

  • Pat the chicken thighs dry with paper towels. This helps the seasoning stick better. Lightly season both sides with salt, pepper, smoked paprika, cumin, and onion powder.

Step 2: Make the Honey Chipotle Sauce

  • In a mixing bowl, whisk together honey, chopped chipotle peppers, adobo sauce, minced garlic, chicken broth, apple cider vinegar, and olive oil. The sauce should smell smoky, sweet, and slightly tangy.

Step 3: Layer in the Crockpot

  • Place the seasoned chicken thighs into the crockpot in a single layer if possible. Pour the honey chipotle sauce evenly over the chicken, making sure each piece is coated.

Step 4: Slow Cook to Perfection

  • Cover and cook on low for 4–6 hours. I strongly recommend cooking on low rather than high. Slow cooking gives the honey time to meld with the chipotle and prevents burning.
  • The chicken is done when it reaches an internal temperature of 165°F and easily shreds with a fork.

Step 5: Thicken the Sauce (Optional but Worth It)

  • If you prefer a thicker, stickier sauce, remove the chicken and set aside. Whisk cornstarch with water and stir into the sauce. Turn the crockpot to high and cook uncovered for 10–15 minutes until thickened.
  • Return the chicken to the sauce and spoon it over the top.

Step 6: Garnish and Serve

  • Sprinkle fresh cilantro over the chicken and squeeze fresh lime juice before serving. That little burst of citrus brightens everything beautifully.
