Equipment

Ingredients
  

  • 2 ½ pounds beef chuck roast trimmed of excess fat
  • 1 cup low-sodium soy sauce
  • ½ cup packed brown sugar
  • 1 tablespoon sesame oil
  • 4 cloves garlic minced
  • 1 tablespoon freshly grated ginger
  • ½ teaspoon black pepper
  • ½ teaspoon crushed red pepper flakes adjust to taste
  • ½ cup beef broth
  • 1 tablespoon cornstarch + 2 tablespoons water optional, for thickening
  • 3 green onions sliced (for garnish)
  • 1 tablespoon sesame seeds for garnish

Optional for serving:

  • Steamed white rice
  • Shredded carrots
  • Sliced cucumbers
  • Steamed broccoli

Instructions
 

Step 1: Prepare the Beef

  • Pat the chuck roast dry with paper towels. If it is very large, cut it into 2–3 big chunks so it fits comfortably in the crockpot.

Step 2: Build the Sauce

  • In a mixing bowl, whisk together soy sauce, brown sugar, sesame oil, garlic, ginger, black pepper, red pepper flakes, and beef broth. The aroma should be savory, slightly sweet, and fragrant with ginger.

Step 3: Add to Crockpot

  • Place the beef into the crockpot. Pour the sauce evenly over the top, making sure the meat is mostly covered.

Step 4: Slow Cook

  • Cover and cook on low for 6–8 hours. I strongly recommend low for the most tender texture. The beef should easily pull apart with a fork when done.

Step 5: Shred the Beef

  • Remove the beef from the crockpot and shred it using two forks. It should fall apart effortlessly. Return the shredded beef to the sauce and stir to coat completely.

Step 6: Thicken the Sauce (Optional)

  • If you prefer a thicker sauce, whisk cornstarch and water together. Stir into the crockpot and cook on high for 15–20 minutes until glossy and slightly thickened.

Step 7: Garnish and Serve

  • Top with sliced green onions and sesame seeds before serving.
