Equipment

  • 6-quart slow cooker (Crockpot)
  • Cutting board
  • Sharp knife
  • Measuring spoons
  • Hand mixer or two forks (for shredding)
  • Mixing spoon
  • Serving spoon
  • Slow cooker liner for easy cleanup
  • Meat thermometer

Ingredients

  • 2 lbs boneless skinless chicken breasts
  • 1 packet 1 oz ranch seasoning mix
  • 1 packet 1 oz au jus gravy mix
  • 6 –8 whole pepperoncini peppers
  • 1/2 cup pepperoncini juice from the jar
  • 1/2 cup unsalted butter 1 stick, sliced
  • 8 oz cream cheese softened
  • 1 cup shredded cheddar cheese
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder optional but lovely
  • Fresh parsley for garnish optional

Instructions

Step 1: Prepare the Crockpot

  • Lightly spray your slow cooker with non-stick spray or use a liner for easy cleanup.

Step 2: Add the Chicken

  • Place the boneless, skinless chicken breasts in the bottom of the crockpot in a single layer.

Step 3: Season Generously

  • Sprinkle the ranch seasoning mix evenly over the chicken. Then add the au jus gravy mix. Don’t stir yet — just let it sit right on top.

Step 4: Add the Peppers and Juice

  • Place the whole pepperoncini peppers around the chicken. Pour in about 1/2 cup of the pepperoncini juice. This adds that signature tangy flavor.

Step 5: Add the Butter

  • Lay the sliced butter evenly over the top. It may seem like a lot, but trust me — it creates that rich sauce.

Step 6: Slow Cook

  • Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours, until the chicken is tender and easily shreddable.

Step 7: Add the Cream Cheese

  • About 30 minutes before serving, add the softened cream cheese. Let it melt into the hot sauce.

Step 8: Shred the Chicken

  • Use two forks or a hand mixer to shred the chicken directly in the crockpot. Stir everything together until creamy.

Step 9: Add Shredded Cheese

  • Stir in the shredded cheddar cheese until melted and smooth.

Step 10: Serve and Enjoy

  • Garnish with fresh parsley if desired. Serve hot over mashed potatoes, rice, pasta, or on sandwich buns.
