Equipment

  • 6-inch cake pan (or individual serving ramekins) or 7-inch cake pan.
  • Stand mixer or hand mixer
  • Mixing bowls
  • Rubber spatula
  • Measuring cups and spoons.
  • Cooling rack
  • Baker buttering brush (buttering pans)

Ingredients
  

For the Cake:

  • 1 cup 2 sticks softened unsalted butter.
  • 1 1/2 cups granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 tsp almond extract not necessary but beautiful
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup cream cheese softened
  • 1/2 cup heavy cream

For the Topping:

  • 2 tbsp melted butter to brush the pan
  • 1 tbsp granulated sugar to give it that caramelised crust

For Serving:

  • Vanilla ice cream
  • Brown buttercream.
  • Fresh berries or mint an alternative, although so pretty

Instructions
 

Step 1: Preheat and Prep

  • Prepare your oven to 350degF (175degC). Brush your cake pan (or ramekins) with added butter. Lay a thin coating of sugar on the bottom and sides- this forms the caramelized layer of heaven.

Step 2: Cream Butter and Sugar.

  • Cream the softened butter in a large mixing dish with the sugar until pale, light, and fluffy, i.e,. 3 to 4 minutes. No hurry; it is a step that provides the cake with its characteristic texture.

Step 3: Add Eggs and Extracts

  • Add the eggs one by one, and scrape the sides with each addition. Next, put in vanilla and almond extracts.

Step 4: Blend in Cream Cheese

  • Add soft cream cheese and blend until the batter is smooth and silky. It is already supposed to smell like heaven.

Step 5: Mix Dry Ingredients.

  • In another bowl, combine the flour, baking powder, and salt and whisk them. These dry ingredients should be added gradually to the wet mixture, alternating with the heavy cream. Begin and end with the flour mixture.

Step 6: Pour and Bake

  • Batter into your prepared pan(s). Bake between 35-40 minutes or until the top is golden brown and a toothpick put into the middle comes out mostly clean.
  • Bake approximately 25-30 minutes per serving ramekin.

Step 7: Cool Slightly and Serve

  • Allow the cake to rest for approximately 10 minutes, then turn it out by turning it gently. Serve hot with a serving of vanilla ice cream and topped with caramel sauce.
