- 2 cups full-fat cottage cheese
- 1/4 cup dill pickle juice from the jar
- 1 cup finely chopped dill pickles
- 2 tablespoons ranch seasoning mix
- 1 tablespoon fresh chopped dill or 1 teaspoon dried dill
- 1/2 teaspoon garlic powder
- 1/4 teaspoon black pepper
- 1 tablespoon fresh lemon juice optional, for brightness
- 2 tablespoons finely chopped green onions optional but lovely
Optional for garnish:
- Extra chopped pickles
- Fresh dill sprigs
- Cracked black pepper
Step 1: Blend the Cottage Cheese
Add the cottage cheese to your blender or food processor. Blend for 1–2 minutes until completely smooth and creamy. Scrape down the sides as needed.
Don’t rush this step. The magic of this dip is that silky texture. It should look like thick Greek yogurt when you’re done.
Step 2: Add the Flavor Base
Pour the blended cottage cheese into a mixing bowl. Stir in the ranch seasoning, garlic powder, black pepper, and lemon juice if using.
Give it a taste. This is your base. It should already taste good.
Step 3: Add Pickles and Herbs
Fold in the finely chopped dill pickles, pickle juice, fresh dill, and green onions.
Mix gently but thoroughly. You want every scoop to have bits of pickle.
Step 4: Chill
Cover the bowl and refrigerate for at least 30 minutes. This allows the flavors to blend and deepen.
If you can wait longer, even better. After a few hours, this dip becomes even more flavorful.
Step 5: Serve
Transfer to a serving bowl. Garnish with extra chopped pickles and fresh dill if you like.
Serve cold with chips, crackers, or fresh vegetables.
And watch it disappear.
- Blend the cottage cheese thoroughly. Grainy dip is not what we want.
- Chop the pickles finely. Large chunks can overpower each bite.
- If the dip feels too thick, add a tablespoon of pickle juice at a time until you reach your preferred consistency.
- If it feels too thin, let it chill longer. It thickens as it rests.
