For the Pumpkin Spice Syrup:
- 1/2 cup pumpkin purée not pumpkin pie filling
- ½ cup brown sugar
- ½ cup water
- 1 tsp vanilla extract
- 1 tsp ground cinnamon
- ¼ tsp ground nutmeg
- ¼ tsp ground ginger
- A pinch of cloves
- A pinch of salt
For the Coffee:
- 1 cup fresh coffee or 2 shots of espresso
- 1/2 cup milk whole or oat milk to be creamy
- 2-3 tbsp pumpkin spice syrup to taste
- Whipped cream not a necessity, but so good
- Sprinkle of cinnamon or pumpkin pie spice on top.
Step 1: Prepare the Pumpkin Spice Syrup.
Pumpkin puree, brown sugar, water, and all the spices are to be mixed in a small saucepan. Bring to a soft simmer using medium heat with constant whisking. Allow it to simmer after about 5 minutes till it becomes slightly thick.
Take off the heat, add vanilla extract, and allow to cool down. Pass through a fine sieve, in case you would prefer a finer texture.
Keep the syrup in a jar - it will last a week in the refrigerator!
Step 4: Mix It Up
Pour in 2-3 tablespoons of your pumpkin spice syrup. Add hot coffee, stir thoroughly and add frothed milk. Top with whipped cream and a sprinkle of cinnamon in case you are celebrating.
