Ingredients
  

  • 1 baguette or rustic Italian bread, sliced
  • 3 cups ripe tomatoes chopped
  • 200 g fresh mozzarella cubed or torn
  • 2 cloves garlic peeled
  • 1/4 cup fresh basil leaves chopped or torn
  • 3 tablespoons extra virgin olive oil
  • 1 tablespoon balsamic glaze optional but recommended
  • Salt to taste
  • Freshly ground black pepper to taste

Instructions
 

Step 1: Prepare the Tomato Mixture

  • In a mixing bowl, combine chopped tomatoes, mozzarella, and basil. Add olive oil, salt, and black pepper. Gently mix everything together.
  • Let it sit for about 10 minutes. This resting time allows the flavors to blend beautifully. The tomatoes release their juices, creating a light, natural dressing.

Step 2: Toast the Bread

  • Preheat your oven to 200°C (or heat a grill pan).
  • Arrange the bread slices on a baking tray and lightly brush both sides with olive oil. Toast for 6–8 minutes or until golden and crisp.
  • You want a crunchy base that can hold the topping without becoming soggy.

Step 3: Rub with Garlic

  • While the bread is still warm, rub each slice with a clove of garlic. This step adds a subtle but irresistible flavor.

Step 4: Assemble the Bruschetta

  • Spoon the tomato and mozzarella mixture onto each slice generously.

Step 5: Finish and Serve

  • Drizzle with balsamic glaze if using. Serve immediately while the bread is still crisp.
