For the Cake
- 2 cups fresh strawberries hulled
- 2 ½ cups cake flour for softness
- 1 tablespoon baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- 1 cup softened unsalted butter.
- 1 ¾ cups granulated sugar
- 4 large egg whites room temperature.
- ½ cup sour cream
- 1 cup buttermilk
- 1 tablespoon vanilla extract
- 2-3 drops of pink gel food color not necessary, but can be used to imitate the appearance of Edgar
For the Strawberry Cream Cheese Frosting
- 1 cup of puréed and reduced fresh strawberries.
- 1 cup unsalted butter which is softened.
- 8 oz cream cheese softened
- 5 cups powdered sugar sifted
- 1 teaspoon vanilla
- Pinch of salt
Step 1: Preparation of Strawberry Purée
Blend strawberries until smooth.
Add to a saucepan and cook on low heat for about 15-20 minutes until it becomes thick and half.
Cool completely. It is your taste sensation.
Step 2: Prepare the Cake Batter
Preheat oven to 350°F (175°C).
Oil your cake pans and parchment them.
Combine flour, baking powder, baking soda, and salt.
Blend sugar and cream butter until light and fluffy.
Add egg whites one at a time.
Mix in vanilla and sour cream.
Sprinkle in the dry ingredients in a random fashion, buttermilk.
Add 1/2 cup of strawberries.
Add some pink food color in case you want that bakery pink color.
Step 3: Bake
Pour batter evenly into pans.
Depending on the pan size, bake 25-30 minutes.
Allow to cool, frost before frosting.
Step 4: Make the Frosting
Cream the butter and beat the cream cheese until smooth.
Add sugar powder in small amounts.
Add 1/2 cup cooled strawberry reduction, vanilla, and salt.
Whip until fluffy and smooth.
