Ingredients
  

  • 2 slices thick-cut artisan bread sourdough or multigrain works best
  • 2 large ripe avocados
  • 1 tablespoon fresh lemon juice about half a lemon
  • tablespoons extra virgin olive oil plus more for drizzling
  • ½ teaspoon sea salt adjust to taste
  • ¼ teaspoon black pepper

Optional toppings (very First Watch–inspired):

  • Cherry tomatoes halved
  • Red pepper flakes
  • Flaky sea salt
  • Soft-poached or sunny-side-up eggs
  • Microgreens or arugula

Instructions
 

Toast the bread

  • Start by toasting your bread until it’s golden brown and crisp on the outside, but still slightly soft inside. This texture matters—it should support the avocado without turning rock hard.

Prep the avocados

  • Cut the avocados in half, remove the pits, and scoop the flesh into a bowl. Use a fork to gently mash them. Don’t overdo it—you want some texture, not avocado baby food.

Season simply

  • Add lemon juice, olive oil, salt, and black pepper to the avocado. Mix gently. Taste it. This is important. Adjust the seasoning until it tastes bright and clean.

Assemble the toast

  • Spoon the avocado mixture generously over each slice of toast. Spread it evenly, but don’t smash it down too much.

Finish and serve

  • Drizzle with a little extra olive oil, add your favorite toppings, and serve immediately.
