Equipment

  • Small mixing bowl
  • Spoon or spatula
  • Cutting board
  • Sharp knife
  • Measuring spoons
  • Airtight container for storage

Ingredients

Base Ingredients

  • ½ cup mayonnaise
  • 3 tbsp ketchup
  • 2 –3 tbsp finely chopped pickled jalapeños
  • 1 –2 tsp jalapeño brine from the jar
  • ½ tsp garlic powder
  • ¼ tsp smoked paprika
  • tsp onion powder
  • Pinch of sugar optional, but lovely for balance
  • Salt to taste
  • Black pepper to taste

Optional Kick

  • A dash of hot sauce
  • ¼ tsp cayenne
  • Extra chopped jalapeños

Instructions

Combine the Base

  • Mix mayo and ketchup in a small bowl until smooth and peachy.

Chop the Jalapeños

  • Finely dice the pickled jalapeños — the smaller the pieces, the better they blend.

Add the Flavor Bombs

  • Add in jalapeños, brine, garlic powder, smoked paprika, onion powder, salt, and pepper.

Adjust to Taste

  • More tang → brine
  • Sweeter → ketchup
  • Creamier → mayo

Chill

  • Cover and chill for 30 minutes (1 hour is even better).
  • This is mandatory — flavors need time to fall in love.

Serve

  • Pair with fries, burgers, chicken tenders, tacos — or eat with a spoon. I don’t judge.
