Ingredients
  

For the salad base:

  • 4 cups shredded green cabbage
  • 1 cup shredded purple cabbage optional for color
  • 1 cup canned sweet corn drained
  • 1 cup canned black beans rinsed and drained
  • 1/2 cup diced tomatoes
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup finely chopped red onion

For the dressing:

  • 1/2 cup mayonnaise
  • 2 tablespoons sour cream or plain yogurt
  • 1 tablespoon lime juice or apple cider vinegar
  • 1 teaspoon honey or sugar
  • 1/2 teaspoon chili powder
  • Salt and black pepper to taste

For topping:

  • 2 cups crunchy corn chips added just before serving
  • Fresh cilantro for garnish optional

Instructions
 

Prepare the vegetables

  • In a large bowl, combine shredded green cabbage, purple cabbage, corn, black beans, tomatoes, cheese, and red onion. Toss gently so everything is evenly mixed.

Make the creamy dressing

  • In a medium bowl, whisk together mayonnaise, sour cream or yogurt, lime juice, honey, chili powder, salt, and pepper until smooth and creamy.

Combine salad and dressing

  • Pour the dressing over the cabbage mixture and toss well until everything is lightly coated. Taste and adjust seasoning if needed.

Add the crunch

  • Just before serving, sprinkle crunchy corn chips over the top. Toss lightly or leave them on top for texture contrast.

Serve immediately

  • Serve fresh for the best crunch and flavor. Garnish with chopped cilantro if desired.
