- 1 lb ground beef
- 1 packet taco seasoning 1 oz
- 1/3 cup water for seasoning
- 1 can 15 oz chili beans, drained
- 1 can 15 oz whole kernel corn, drained
- 1 head romaine lettuce chopped (about 6 cups)
- 1 cup cherry tomatoes halved
- 2 cups shredded cheddar cheese
- 1/2 cup diced red onion
- 1 bag 9.25 oz Fritos corn chips
For the Dressing:
- 1 cup sour cream
- 1/2 cup mayonnaise
- 1 tablespoon taco seasoning
- 1 tablespoon lime juice optional but brightens everything
Step 1: Cook the Ground Beef
Step 3: Prepare the Vegetables
Chop the romaine lettuce, halve the cherry tomatoes, dice the red onion, and drain the corn and chili beans.
Step 4: Make the Dressing
In a small bowl, whisk together sour cream, mayonnaise, taco seasoning, and lime juice until smooth and creamy.
Step 5: Assemble the Salad
In a large mixing bowl, combine lettuce, tomatoes, red onion, corn, chili beans, and shredded cheddar cheese.
Add the seasoned beef (slightly cooled) and toss gently.
Step 6: Add the Crunch
