  • 2 ¼ teaspoons active dry yeast
  • 1 cup warm water about 110°F
  • 2 ½ cups all-purpose flour
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • 3 tablespoons olive oil plus extra for topping
  • 3 cloves garlic finely minced
  • 1 tablespoon fresh rosemary finely chopped
  • ¼ teaspoon black pepper
  • ½ teaspoon flaky sea salt

Instructions
 

Step 1: Activate the Yeast

  • In a small bowl, combine the warm water, sugar, and yeast. Let it sit for about 5 minutes. When the mixture becomes foamy and slightly bubbly, you know the yeast is alive and ready to work its magic.

Step 2: Mix the Dough

  • In a large mixing bowl, combine the flour and salt. Pour in the yeast mixture along with the olive oil, minced garlic, rosemary, and black pepper. Stir everything together until a soft dough forms. It should feel slightly sticky but still manageable.

Step 3: Knead Until Smooth

  • Turn the dough onto a lightly floured surface and knead for about 5–7 minutes. As you knead, you will feel the dough become smoother and more elastic. This step helps develop the gluten that gives the muffins their airy texture.

Step 4: First Rise

  • Place the dough in a lightly oiled bowl and cover it with a kitchen towel. Allow it to rise in a warm spot for about 30 minutes. It does not need to double in size completely — just become slightly puffy and relaxed.

Step 5: Prepare the Muffin Tin

  • Generously brush your muffin tin with olive oil. This step is important because it helps create the golden crust that makes these muffins so delicious.

Step 6: Divide the Dough

  • Once the dough has rested, divide it into 12 equal portions. Place each portion into a muffin cup. The dough will look a little rustic at this stage, and that is perfectly fine.

Step 7: Create the Signature Focaccia Dimples

  • Using your fingertips, gently press small dimples into the tops of each dough portion. These dimples help hold olive oil and create that classic focaccia appearance.
  • Drizzle a little olive oil over each muffin and sprinkle with flaky sea salt and a bit more rosemary if desired.

Step 8: Bake to Golden Perfection

  • Bake in a preheated 400°F oven for 18–20 minutes. The tops should turn beautifully golden with crisp edges while the centers remain soft and fluffy.

Step 9: Cool Slightly and Serve

  • Allow the muffins to cool for about 5 minutes before removing them from the pan. Serve warm for the best flavor and texture.
