Equipment

  • Mixing bowls (large and medium).
  • Measuring cups and spoons.
  • Pastry cutter or fork
  • Baking tray
  • Parchment paper
  • Rolling pin (optional)
  • Biscuit cutter or glass
  • Pastry brush
  • Oven

Ingredients

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup unsalted butter cold, cubed
  • 1 cup sharp cheddar cheese grated
  • 1/4 cup parmesan cheese grated
  • 3/4 cup whole milk
  • 1 teaspoon garlic powder
  • 1 teaspoon dried herbs thyme or parsley

Optional topping:

  • 2 tablespoons melted butter
  • Extra grated cheese

Instructions

Step 1: Preheat the oven

  • Preheat your oven to 400°F (200°C) and line a baking tray with parchment paper.

Step 2: Mix dry ingredients

  • In a large bowl, whisk together the flour, baking powder, baking soda, salt, black pepper, garlic powder, and herbs.

Step 3: Cut in the butter

  • Add the cold, cubed butter to the dry ingredients. Use a pastry cutter or fork to mix until the texture resembles coarse crumbs. This step is key for flaky biscuits.

Step 4: Add cheese

  • Stir in the grated cheddar and parmesan cheese, distributing it evenly throughout the mixture.

Step 5: Add milk

  • Pour in the milk and gently mix until a soft dough forms. Be careful not to overmix—the dough should be slightly sticky but manageable.

Step 6: Shape the dough

  • Turn the dough onto a lightly floured surface and gently pat it into a 1-inch thick layer. Use a biscuit cutter or glass to cut out rounds.

Step 7: Bake

  • Place the biscuits on the prepared tray and bake for 12–15 minutes, or until golden brown on top.

Step 8: Finish and serve

  • Brush with melted butter and sprinkle with extra cheese if desired. Serve warm.

Notes

  • Always use cold butter for the best texture.
  • Don’t overwork the dough—it should stay light.
  • Use freshly grated cheese for better melting and flavor.
  • Bake immediately after shaping for best results.
