Ingredients
  

  • 6 bone-in chicken thighs skin removed if preferred
  • 150 g chorizo sliced into thick rounds
  • 1 large onion finely chopped
  • 3 cloves garlic minced
  • 1 red bell pepper sliced
  • 1 yellow bell pepper sliced
  • 400 g canned chopped tomatoes
  • 2 tablespoons tomato paste
  • 150 ml chicken stock
  • 1 teaspoon smoked paprika
  • 1 teaspoon sweet paprika
  • 1 teaspoon dried oregano
  • 1/2 teaspoon chili flakes optional
  • 100 g green olives pitted
  • Salt and black pepper to taste
  • 2 tablespoons olive oil
  • Fresh parsley chopped (for garnish)

Instructions
 

Step 1: Prepare the ingredients

  • Start by chopping your onion, slicing the peppers, and mincing the garlic. Cut the chorizo into chunky slices so it holds its shape during cooking.

Step 2: Brown the chicken (optional but recommended)

  • Heat olive oil in a pan over medium heat. Lightly brown the chicken thighs on both sides. This step adds a deeper flavor but can be skipped if you’re short on time.

Step 3: Sauté the base

  • In the same pan, cook the onions until soft, then add garlic and cook for another minute. Stir in the paprika and tomato paste to release their flavors.

Step 4: Assemble in the slow cooker

  • Transfer everything into the slow cooker. Add chicken, chorizo, peppers, tomatoes, stock, oregano, chili flakes, and olives.

Step 5: Cook low and slow

  • Cover and cook on low for 6 hours or high for 4 hours. The chicken should be tender and the sauce rich and thick.

Step 6: Final seasoning

  • Taste and adjust salt and pepper. Sprinkle fresh parsley before serving.

Notes

  • Use bone-in chicken for more flavor.
  • Don’t skip browning if you can—it makes a difference.
  • Let it rest for 10 minutes before serving to thicken the sauce.
  • Add a splash of lemon juice at the end for freshness.
