Ingredients
  

  • 800 g potatoes peeled and sliced into rounds
  • 200 g bacon lardons or chopped bacon
  • 1 large onion thinly sliced
  • 200 ml heavy cream
  • 1 garlic clove minced
  • 250 g Reblochon cheese or Brie/Camembert as substitute
  • 1 tablespoon butter
  • Salt to taste
  • Black pepper to taste

Instructions
 

Step 1: Prepare the Potatoes

  • Bring a large pot of salted water to a boil. Add the sliced potatoes and cook for about 8–10 minutes until just tender but not falling apart.
  • Drain them carefully and let them steam dry slightly. This step helps prevent excess moisture in the final dish.

Step 2: Cook the Bacon

  • In a frying pan over medium heat, cook the bacon until golden and slightly crisp. You want that beautiful balance—crispy edges but still a bit tender inside.
  • Remove the bacon and set aside, leaving a little of the fat in the pan for flavor.

Step 3: Soften the Onions

  • Add butter to the same pan along with the sliced onions. Cook gently until soft, glossy, and lightly caramelized. This takes patience, but it’s worth it.
  • Add the minced garlic and cook for another minute until fragrant.

Step 4: Add Cream

  • Pour in the heavy cream and stir gently. Let it warm through and absorb the flavors from the pan. Season lightly with salt and black pepper.

Step 5: Assemble the Dish

  • In your baking dish, start layering:
  • First layer: half of the potatoes
  • Second layer: half of the bacon and onion mixture
  • Repeat the layers again
  • Try to spread everything evenly so each bite has a bit of everything.

Step 6: Add the Cheese

  • Slice the cheese and place it generously on top. If using traditional cheese, place it rind-side up.

Step 7: Bake

  • Bake in a preheated oven at 180°C (350°F) for 25–30 minutes until the top is golden, bubbling, and slightly crisp around the edges.

Step 8: Rest and Serve

  • Let the dish rest for 5–10 minutes before serving. This helps everything settle and makes it easier to scoop.
