For the Filling
- 300 g cooked turkey shredded or cubed
- 200 g cooked ham diced
- 1 small onion finely chopped
- 2 cloves garlic minced
- 2 tablespoons butter
- 2 tablespoons plain flour
- 400 ml chicken stock
- 100 ml double cream
- 1 teaspoon Dijon mustard
- Salt and black pepper to taste
- 1/2 teaspoon dried thyme
- 100 g frozen peas optional
For the Pastry
- 1 sheet ready-made puff pastry
- 1 egg beaten, for egg wash
Step 1: Build the flavor base
In a large pan, melt the butter over medium heat. Add the chopped onion and cook gently until soft and translucent. This step is all about building flavor slowly—don’t rush it.
Add the garlic and cook for another minute until fragrant. You’ll start to notice that comforting aroma forming already.
Step 3: Add the liquid
Gradually pour in the chicken stock, stirring continuously to avoid lumps. Take your time here—this is where your sauce becomes smooth and velvety.
Once combined, stir in the cream and Dijon mustard. Let the sauce simmer gently until it thickens to a silky consistency.
Step 4: Add the filling
Add the turkey, ham, and peas into the sauce. Stir everything together until evenly coated. Season with salt, pepper, and thyme.
