- 4 cups peeled and diced potatoes Yukon Gold or Russet
- 2 cups diced ham cooked
- 1 medium onion finely chopped
- 2 cloves garlic minced
- 3 cups chicken broth
- 1 cup milk or heavy cream
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 1 teaspoon dried thyme
- Salt and black pepper to taste
- 2 green onions chopped (optional garnish)
- 1/2 cup shredded cheddar cheese optional garnish
