Ingredients
  

For the Chicken

  • 2 large chicken breasts halved into 4 pieces
  • 1 cup buttermilk
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder

For the Coating

  • 1 cup all-purpose flour
  • 1/2 cup cornstarch
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

For the Honey Chipotle Sauce

  • 1/3 cup honey
  • 2 tablespoons chipotle sauce or chopped chipotle in adobo
  • 1 tablespoon butter
  • 1 teaspoon vinegar or lime juice

For the Cajun Slaw

  • 2 cups shredded cabbage
  • 1/2 cup shredded carrots
  • 1/3 cup mayonnaise
  • 1 teaspoon Cajun seasoning
  • 1 teaspoon lemon juice
  • Salt to taste

For Assembly

  • 4 burger buns
  • Butter for toasting

Instructions
 

Step 1: Marinate the Chicken

  • In a bowl, combine buttermilk, salt, pepper, paprika, and garlic powder. Add the chicken and let it marinate for at least 20 minutes (or up to overnight for deeper flavor).

Step 2: Prepare the Slaw

  • In another bowl, mix cabbage, carrots, mayonnaise, Cajun seasoning, lemon juice, and salt. Toss until evenly coated. Refrigerate while you prepare the rest.

Step 3: Make the Coating

  • In a shallow bowl, combine flour, cornstarch, paprika, salt, and pepper. This mixture will give the chicken its crispy crust.

Step 4: Coat the Chicken

  • Remove chicken from the marinade and dredge it in the flour mixture. Press gently to ensure a thick, even coating.

Step 5: Fry the Chicken

  • Heat oil in a deep pan over medium heat. Fry the chicken pieces for 5–6 minutes per side, or until golden brown and fully cooked. Transfer to a rack or paper towels.

Step 6: Make the Honey Chipotle Sauce

  • In a small saucepan, combine honey, chipotle sauce, butter, and vinegar. Heat gently until smooth and slightly thickened.

Step 7: Coat the Chicken

  • Brush or toss the fried chicken in the warm honey chipotle sauce until well coated.

Step 8: Toast the Buns

  • Lightly butter the buns and toast them in a pan until golden.

Step 9: Assemble the Sandwich

  • Place the glazed chicken on the bottom bun, top with Cajun slaw, and cover with the top bun.

Step 10: Serve

  • Serve immediately while warm and crispy.
