Ingredients
  

  • 3 cups fresh carrots peeled and sliced diagonally
  • 3 cups fresh green beans trimmed
  • 2 tablespoons unsalted butter
  • 2 tablespoons honey
  • 1 teaspoon olive oil
  • 2 cloves garlic minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon dried thyme or 1 teaspoon fresh thyme
  • 1 teaspoon lemon juice optional, for brightness

Instructions
 

Step 1: Prep the Vegetables

  • Peel and slice the carrots into diagonal pieces about 1/4-inch thick. Trim the ends of the green beans. Try to keep them similar in size so they cook evenly.

Step 2: Blanch the Green Beans (Optional but Recommended)

  • Bring a pot of salted water to a boil. Add green beans and cook for 2–3 minutes until bright green and slightly tender. Drain and rinse briefly under cool water. This keeps them vibrant and crisp.

Step 3: Sauté the Carrots

  • Heat olive oil and 1 tablespoon butter in a large skillet over medium heat. Add the carrots and cook for 6–8 minutes, stirring occasionally, until slightly tender and lightly caramelized.

Step 4: Add Green Beans and Garlic

  • Add the blanched green beans and minced garlic. Cook for 3–4 minutes, allowing flavors to blend.

Step 5: Make the Honey Glaze

  • Lower heat slightly. Add remaining butter and honey. Stir gently until everything is coated in a glossy glaze.

Step 6: Season and Finish

  • Add salt, pepper, thyme, and a splash of lemon juice if using. Cook another 1–2 minutes. Remove from heat and serve warm.
