Ingredients
  

For the Chicken:

  • 2 boneless chicken breasts diced into bite-sized pieces
  • 2 tablespoons honey
  • 2 tablespoons fresh lime juice
  • 1 tablespoon soy sauce
  • 2 cloves garlic minced
  • 1 tablespoon olive oil
  • ½ teaspoon salt
  • ½ teaspoon black pepper

For the Rice:

  • 1 cup basmati or jasmine rice
  • 2 cups water
  • ½ teaspoon salt
  • 1 tablespoon lime juice
  • 1 tablespoon finely chopped fresh cilantro
  • For the Avocado Layer:
  • 2 ripe avocados
  • 1 tablespoon lime juice
  • ¼ teaspoon salt

Optional Toppings:

  • Cherry tomatoes halved
  • Extra chopped cilantro
  • Chili flakes or sliced green chilies
  • A light drizzle of yogurt or sauce optional

Instructions
 

Step 1: Cook the Rice Perfectly

  • Start by rinsing the rice under cold water until the water runs clear. This removes excess starch and helps keep the grains fluffy. In a saucepan, combine rice, water, and salt. Bring to a boil, then reduce the heat to low, cover, and let it cook for 12–15 minutes.
  • Once done, turn off the heat and let it rest for 5 minutes. Fluff with a fork and gently mix in lime juice and chopped cilantro. The rice should smell fresh and slightly citrusy.

Step 2: Prepare the Honey Lime Marinade

  • In a mixing bowl, combine honey, lime juice, soy sauce, minced garlic, salt, and pepper. Stir until smooth. Add the diced chicken and coat it well. Let it marinate for at least 10–15 minutes so the flavors soak in.

Step 3: Cook the Chicken

  • Heat olive oil in a non-stick pan over medium heat. Add the marinated chicken pieces in a single layer. Cook for about 8–10 minutes, stirring occasionally, until the chicken is fully cooked and lightly caramelized.
  • The sauce will reduce and become slightly sticky, coating each piece beautifully. This is where the magic happens—the honey caramelizes, the lime brightens, and the garlic deepens the flavor.

Step 4: Prepare the Avocado Layer

  • In a bowl, mash the avocados with lime juice and salt. Keep the texture slightly chunky rather than completely smooth. This adds more character to the dish.

Step 5: Assemble the Stack

  • Place a ring mold on a serving plate. Add a layer of rice and gently press it down. Next, add a layer of mashed avocado, smoothing it lightly. Finally, top with the honey lime chicken.
  • Carefully lift the mold to reveal a neat, layered stack.

Step 6: Garnish and Serve

  • Add cherry tomatoes, cilantro, or chili flakes on top. Serve immediately while everything is fresh and warm.
