Ingredients
  

  • 200 g spaghetti or linguine
  • 3 tbsp olive oil extra virgin preferred
  • 4 cloves garlic thinly sliced
  • 1 tsp red chili flakes adjust to taste
  • 1/2 cup grated parmesan cheese
  • Salt to taste
  • Fresh parsley optional
  • 1/2 cup pasta water reserved

Instructions
 

Step 1: Boil the pasta

  • Bring a pot of salted water to a boil. Cook pasta until al dente. Before draining, reserve about half a cup of pasta water.

Step 2: Heat the oil

  • In a skillet, add olive oil and warm it gently over medium heat.

Step 3: Add garlic and chili flakes

  • Add sliced garlic and red pepper flakes. Let them sizzle slowly until fragrant and lightly golden. Be careful not to burn the garlic.

Step 4: Combine pasta

  • Add cooked pasta directly into the skillet. Toss well so it absorbs the flavored oil.

Step 5: Adjust texture

  • Add reserved pasta water little by little to create a silky sauce.

Step 6: Finish with cheese

  • Stir in parmesan cheese until melted and creamy.

Step 7: Serve immediately

  • Top with parsley and extra cheese if desired.
