- 1 9- inch pie crust store-bought or homemade
For the filling
- 1 tablespoon butter
- 1 small onion finely chopped
- 3 cups fresh spinach
- 4 large eggs
- 1 cup heavy cream
- 1/2 cup whole milk
- 1 cup shredded Gruyère cheese
- 1/4 cup grated Parmesan cheese
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon nutmeg

In a skillet over medium heat, melt the butter. Add the chopped onion and cook for about 3–4 minutes until it becomes soft and slightly translucent.
Next, add the fresh spinach. It may look like a lot at first, but spinach shrinks quickly as it cooks. Stir for about 2–3 minutes until the leaves wilt and any excess moisture evaporates.
Remove the pan from heat and let the mixture cool slightly.

In a large bowl, whisk together the eggs, heavy cream, and milk until smooth and well combined.
