For the crust

  • 1 9- inch pie crust store-bought or homemade

For the filling

  • 1 tablespoon butter
  • 1 small onion finely chopped
  • 3 cups fresh spinach
  • 4 large eggs
  • 1 cup heavy cream
  • 1/2 cup whole milk
  • 1 cup shredded Gruyère cheese
  • 1/4 cup grated Parmesan cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon nutmeg

Step 1: Preheat the oven

  • Start by preheating your oven to 375°F (190°C). A properly heated oven helps the quiche cook evenly and develop a beautiful golden top.

Step 2: Prepare the crust

  • Place the pie crust into a 9-inch pie dish. Press it gently into the sides and trim any excess dough. You can pre-bake the crust for about 10 minutes if you prefer an extra crisp base.

Step 3: Cook the spinach mixture

  • In a skillet over medium heat, melt the butter. Add the chopped onion and cook for about 3–4 minutes until it becomes soft and slightly translucent.
  • Next, add the fresh spinach. It may look like a lot at first, but spinach shrinks quickly as it cooks. Stir for about 2–3 minutes until the leaves wilt and any excess moisture evaporates.
  • Remove the pan from heat and let the mixture cool slightly.

Step 4: Prepare the egg filling

  • In a large bowl, whisk together the eggs, heavy cream, and milk until smooth and well combined.
  • Add salt, black pepper, and nutmeg. The nutmeg might seem like a small detail, but it adds a subtle warmth that makes the entire quiche taste richer.

Step 5: Assemble the quiche

  • Spread the spinach and onion mixture evenly across the crust.
  • Sprinkle the shredded Gruyère and grated Parmesan cheese on top.
  • Slowly pour the egg mixture over everything, allowing it to settle evenly in the pie dish.

Step 6: Bake

  • Place the quiche in the oven and bake for about 40–45 minutes.
  • You'll know it's ready when the center is just set and the top turns lightly golden. A knife inserted near the center should come out mostly clean.

Step 7: Cool and serve

  • Allow the quiche to cool for about 10 minutes before slicing. This helps the filling firm up slightly so you get clean, beautiful slices.
