For the meat mixture:
- 1 pound ground beef or ground turkey
- 1 tablespoon olive oil
- 1 small onion finely chopped
- 3 cloves garlic minced
- 1 cup marinara sauce
- 2 tablespoons tomato paste
- 1 teaspoon Italian seasoning
- ½ teaspoon dried oregano
- ½ teaspoon red pepper flakes optional
- Salt and black pepper to taste
For the garlic bread base:
- 4 large slices garlic bread store-bought or homemade
For topping:
- 1½ cups shredded mozzarella or provolone cheese
- Fresh parsley or basil chopped (optional)
Start by heating olive oil in a large skillet over medium heat. Add the chopped onion and cook until soft and slightly golden, about 4 minutes. Stir in the garlic and cook for another 30 seconds until fragrant.
Add the ground beef and cook until browned, breaking it up as it cooks. Drain excess grease if needed.
Stir in marinara sauce, tomato paste, Italian seasoning, oregano, red pepper flakes, salt, and pepper. Reduce the heat and let the mixture simmer for about 10 minutes. The sauce should be thick and rich, not watery.
While the meat simmers, bake the garlic bread according to package instructions until lightly golden and crisp.
Preheat your oven to broil. Spoon the Italian sloppy joe mixture generously over each slice of garlic bread. Top with shredded cheese.
Place under the broiler for 2 to 3 minutes, just until the cheese melts and bubbles. Keep a close eye on it.
Garnish with fresh herbs if desired and serve immediately.
