  • 4 cups elbow macaroni uncooked
  • 4 tablespoons butter
  • 2 cups milk
  • 2 large eggs
  • 4 cups shredded cheddar cheese

Step 1: Cook the pasta

  • Bring a large pot of salted water to a boil. Add the elbow macaroni and cook until just al dente. You want the pasta to still have a slight bite because it will continue cooking in the oven. Drain and set aside.

Step 2: Prepare the cheese base

  • In a medium saucepan, melt the butter over medium heat. Once melted, pour in the milk and warm it gently. Do not let it boil—just heat it enough so everything blends smoothly.

Step 3: Mix the eggs

  • In a separate bowl, whisk the eggs until smooth. Slowly add a small amount of the warm milk mixture into the eggs while whisking constantly. This step, called tempering, prevents the eggs from scrambling.

Step 4: Combine and build the sauce

  • Pour the tempered egg mixture back into the saucepan. Stir gently, then begin adding the shredded cheddar cheese a handful at a time. Stir continuously until the cheese melts into a creamy, silky sauce.

Step 5: Season it

  • Add salt and black pepper. Taste and adjust if needed. This is where the flavor really comes together.

Step 6: Combine pasta and sauce

  • Add the cooked macaroni into the cheese sauce. Stir until every piece is coated in that rich, velvety mixture.

Step 7: Transfer to baking dish

  • Grease your 9x13-inch baking dish lightly and pour the mixture in. Spread it evenly so it bakes uniformly.

Step 8: Bake to perfection

  • Place the dish in a preheated oven at 350°F (175°C). Bake for 25–30 minutes, until the top is golden and slightly crisp while the inside stays creamy.

Step 9: Let it rest

  • Allow the mac and cheese to sit for about 5–10 minutes before serving. This helps it set and makes scooping easier.
