Equipment

  • Mixing bowl
  • Measuring cups and spoons.
  • Silicone spatula or spoon
  • Baking sheet
  • Parchment paper

Ingredients

  • 1 ½ cups Kodiak Cakes Power Cakes mix
  • ¼ cup brown sugar
  • 2 tablespoons granulated sugar
  • cup melted butter or coconut oil
  • 1 large egg
  • 1 teaspoon vanilla extract
  • ¼ teaspoon baking soda
  • ¼ teaspoon salt
  • ½ cup chocolate chips or mix-ins of choice

Instructions

Step 1: Preheat the Oven

  • Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.

Step 2: Mix the Wet Ingredients

  • In a large bowl, whisk together the melted butter, egg, vanilla extract, brown sugar, and granulated sugar until smooth.

Step 3: Add the Dry Ingredients

  • Add the Kodiak Cakes mix, baking soda, and salt. Stir just until combined. Don’t overmix — the dough will be thick, and that’s exactly what you want.

Step 4: Fold in Mix-Ins

  • Gently fold in chocolate chips or any add-ins you like.

Step 5: Scoop and Bake

  • Scoop the dough onto the baking sheet, spacing cookies about 2 inches apart. Slightly flatten the tops.
  • Bake for 9–11 minutes, until the edges are set and the centers still look soft.

Step 6: Cool

  • Let cookies cool on the baking sheet for 5 minutes, then transfer to a rack. They’ll firm up as they cool.
