Ingredients
  

  • 1 1/2 cups Kodiak Cakes pancake mix
  • 3/4 cup milk regular or dairy-free
  • 1/2 cup pumpkin puree not pumpkin pie filling
  • 1 large egg
  • 1 tablespoon maple syrup or honey
  • 1 teaspoon pumpkin pie spice
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon baking powder optional, for extra fluff

Instructions
 

Step 1: Make the Batter

  • In a large mixing bowl, whisk together the Kodiak pancake mix, pumpkin pie spice, cinnamon, and baking powder if using.
  • Add the milk, pumpkin puree, egg, maple syrup, and vanilla. Stir until just combined. The batter will be thicker than regular pancake batter, and that’s exactly what you want.
  • Let the batter rest for 3 to 5 minutes. This helps hydrate the mix and improves texture.

Step 2: Heat the Pan

  • Heat a nonstick skillet or griddle over medium heat. Lightly grease with butter or oil.

Step 3: Cook the Pancakes

  • Scoop about 1/4 cup of batter per pancake onto the hot surface. Gently spread it slightly, since the batter is thick.
  • Cook for 2 to 3 minutes, until bubbles form on the surface and the edges look set. Flip and cook another 2 minutes until golden brown and cooked through.

Step 4: Serve Warm

  • Serve immediately with butter, maple syrup, or your favorite toppings.
