- 2 swordfish steaks about 6–8 oz each
- 3 tablespoons olive oil
- 4 cloves garlic minced
- Zest of 1 lemon
- Juice of 1 lemon
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon paprika
- 1/2 teaspoon dried oregano or thyme
- 1 tablespoon chopped fresh parsley optional
- Lemon slices for serving
Step 1: Prepare the Marinade
In a small bowl, whisk together olive oil, minced garlic, lemon zest, lemon juice, salt, pepper, paprika, and oregano. The smell alone will make you hungry.
Pat the swordfish steaks dry with paper towels, then brush the marinade generously on both sides. Let them sit for 15–20 minutes. You don’t need longer than that. Lemon is powerful.
