Equipment

  • Large mixing bowl
  • Medium bowl
  • Whisk
  • Pastry cutter or fork
  • Measuring cups
  • Measuring spoons
  • Baking sheet
  • Parchment paper
  • Biscuit cutter or drinking glass
  • Cooling rack

Ingredients

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon salt
  • 1 tablespoon sugar
  • 1/2 cup cold unsalted butter cubed
  • 3/4 cup buttermilk
  • 2 tablespoons pure maple syrup
  • 1 cup sharp cheddar cheese shredded
  • 6 slices bacon cooked and crumbled
  • 1 tablespoon chopped chives optional

Optional maple glaze:

  • 2 tablespoons melted butter
  • 1 tablespoon maple syrup

Instructions

Step 1: Preheat the Oven

  • Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper. A hot oven helps biscuits rise quickly and develop golden tops.

Step 2: Mix the Dry Ingredients

  • In a large bowl, whisk together the flour, baking powder, baking soda, salt, and sugar. This evenly distributes the leavening agents so the biscuits rise properly.

Step 3: Cut in the Butter

  • Add the cold cubed butter to the flour mixture. Use a pastry cutter or fork to work the butter into the flour until the mixture resembles coarse crumbs with small pea-sized pieces of butter.
  • These small butter pockets are what create flaky biscuit layers.

Step 4: Add Bacon and Cheese

  • Gently stir in the shredded cheddar cheese and crumbled bacon. Distribute them evenly throughout the flour mixture so every biscuit gets plenty of flavor.

Step 5: Mix the Wet Ingredients

  • In a small bowl, whisk together the buttermilk and maple syrup.
  • Pour the mixture into the dry ingredients and gently stir until a soft dough forms. Avoid overmixing, as this can make the biscuits tough.

Step 6: Shape the Dough

  • Turn the dough onto a lightly floured surface. Pat it into a rectangle about 1 inch thick.
  • Fold the dough over itself two or three times. This simple folding technique helps create layered biscuits.

Step 7: Cut the Biscuits

  • Use a biscuit cutter or glass to cut out rounds. Place them on the prepared baking sheet with the edges slightly touching for soft sides.

Step 8: Bake Until Golden

  • Bake the biscuits for 13–15 minutes or until the tops are golden brown and the cheese begins to bubble slightly.

Step 9: Optional Maple Butter Glaze

  • Brush warm biscuits with a mixture of melted butter and maple syrup for an extra glossy, flavorful finish.
