Equipment

  • Large mixing bowl
  • Medium mixing bowl
  • Hand mixer or stand mixer
  • Rubber spatula
  • Measuring cups and spoons.
  • Baking sheets
  • Parchment paper
  • Wire cooling rack
  • Paper towels (for drying cherries)
  • Cookie scoop (optional but helpful)

Ingredients

Dry Ingredients

  • 2 ½ cups 315g all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt

Wet Ingredients

  • 1 cup 226g unsalted butter, softened
  • 1 cup 200g granulated sugar
  • ½ cup 100g brown sugar, packed
  • 2 large eggs room temperature
  • 2 teaspoons pure vanilla extract

Mix-Ins

  • 1 cup 170g semi-sweet chocolate chips
  • ¾ cup 120g maraschino cherries, drained, patted dry, and chopped

Instructions

Step 1: Prepare the Cherries Properly

  • Drain the maraschino cherries very well and place them on paper towels. Gently pat them dry. This step is so important because extra moisture can make your dough too wet. Chop them into small pieces and set aside.

Step 2: Mix the Dry Ingredients

  • In a medium bowl, whisk together the flour, baking soda, and salt. Whisking evenly distributes the baking soda, which helps your cookies rise perfectly. Set this bowl aside.

Step 3: Cream the Butter and Sugars

  • In a large mixing bowl, beat the softened butter, granulated sugar, and brown sugar together until light and fluffy. This takes about 2–3 minutes. The mixture should look pale and creamy, almost like frosting.

Step 4: Add Eggs and Vanilla

  • Add the eggs one at a time, mixing well after each addition. Then pour in the vanilla extract. The batter should look smooth and glossy at this stage.

Step 5: Combine Wet and Dry Ingredients

  • Gradually add the dry ingredients to the wet mixture. Mix on low speed just until combined. Do not overmix. The dough should be thick and soft.

Step 6: Fold in Chocolate Chips and Cherries

  • Using a rubber spatula, gently fold in the chocolate chips and chopped cherries. You will see streaks of red throughout the dough. It looks almost festive.

Step 7: Chill the Dough (Highly Recommended)

  • Cover the bowl and refrigerate the dough for at least 30 minutes. This helps prevent spreading and deepens the flavor. If I have time, I chill it for an hour.

Step 8: Preheat and Prepare Baking Sheets

  • Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper. This prevents sticking and helps cookies bake evenly.

Step 9: Scoop and Bake

  • Scoop about 1 ½ tablespoons of dough per cookie and place them 2 inches apart on the baking sheet. Bake for 10–12 minutes, or until the edges are lightly golden but the centers still look slightly soft.

Step 10: Cool Properly

  • Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack. They will continue setting as they cool.
