Equipment

  • Slow cooker or crock pot (4–6 quart works best)
  • Cutting board
  • Sharp knife
  • Measuring cups and spoons.
  • Wooden spoon or silicone spatula
  • Small bowl (for mixing sauce ingredients)

Ingredients

  • 2 pounds boneless skinless chicken breasts
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon Italian seasoning
  • 1 teaspoon paprika
  • 4 cloves garlic minced
  • 1 cup chicken broth
  • 1 cup heavy cream
  • ¾ cup grated Parmesan cheese
  • ½ cup sun-dried tomatoes chopped (oil-packed, drained)
  • 1 teaspoon red pepper flakes optional, adjust to taste
  • 2 tablespoons butter
  • 1 tablespoon cornstarch optional, for thickening
  • Fresh basil or parsley for garnish

Instructions

  • Start by seasoning your chicken breasts with salt, pepper, paprika, and Italian seasoning on both sides. This step is small but important—it builds flavor right from the beginning.
  • Place the seasoned chicken into the bottom of your crock pot. Sprinkle the minced garlic evenly over the chicken, then add the chopped sun-dried tomatoes. These little gems will soften as they cook, releasing their flavor into the sauce.
  • In a bowl, whisk together the chicken broth and heavy cream. Pour this mixture over the chicken, making sure everything is mostly submerged. Add the butter right on top, letting it melt slowly as the dish cooks.
  • Cover and cook on low for 4–5 hours or high for 2–3 hours, until the chicken is tender and cooked through. Try not to lift the lid too often—slow cookers like to keep their heat steady.
  • About 30 minutes before serving, stir in the grated Parmesan cheese. If you want a thicker sauce, mix the cornstarch with a tablespoon of water and stir it into the crock pot at this stage. Let everything cook uncovered for the remaining time so the sauce can thicken slightly.
  • Taste and adjust seasoning if needed. Finish with a sprinkle of red pepper flakes and fresh herbs before serving.
