Ingredients
  

  • 2 cups elbow macaroni
  • 2 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • 2 cups whole milk warm
  • 1 cup heavy cream
  • 2 cups sharp cheddar cheese freshly shredded
  • 1/2 cup mozzarella cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder optional

Instructions
 

Step 1: Cook the Pasta

  • Boil macaroni in salted water until just al dente. Don’t overcook it, because it will continue cooking in the sauce. Drain and set aside.

Step 2: Start the Roux

  • In a saucepan, melt butter over medium heat. Add flour and whisk continuously for 1–2 minutes until it forms a smooth paste. This step is essential for thickening the sauce.

Step 3: Add Milk and Cream Slowly

  • Slowly pour in warm milk and cream while whisking constantly. This prevents lumps and creates a smooth, silky base.

Step 4: Melt the Cheese

  • Lower the heat. Add cheddar and mozzarella gradually, stirring gently until everything melts into a creamy sauce.

Step 5: Combine Pasta and Sauce

  • Add the cooked macaroni into the cheese sauce. Stir until every piece is fully coated and glossy.

Step 6: Optional Baking Step

  • If you prefer a baked finish, transfer to a baking dish, top with extra cheese, and bake at 180°C (350°F) for 10–12 minutes until slightly golden.

Notes

  • Always shred cheese fresh instead of using packaged shredded cheese
  • Keep heat low when melting cheese
  • Stir continuously for smooth texture
  • Don’t overcook pasta
  • Use warm milk, not cold
