Ingredients
  

For the Pasta Base

  • 20 oz cheese tortellini fresh or refrigerated works best
  • Water and salt for boiling

For the Meat Sauce

  • 1 tablespoon olive oil
  • ½ pound ground beef
  • ½ pound Italian sausage mild or spicy
  • 1 cup sliced pepperoni
  • 3 cloves garlic minced
  • 2 cups marinara or pizza sauce
  • 1 teaspoon Italian seasoning
  • ½ teaspoon red pepper flakes optional
  • Salt and black pepper to taste

For the Cheese Finish

  • cups shredded mozzarella cheese
  • ½ cup shredded provolone or pizza blend cheese
  • ¼ cup grated Parmesan cheese

Instructions
 

Step 1: Cook the Tortellini

  • Bring a large pot of salted water to a boil. Cook the tortellini according to package instructions, usually 2–4 minutes for fresh tortellini. Drain and set aside. Don’t overcook—tortellini should be tender but not mushy.

Step 2: Brown the Meats

  • Heat olive oil in a large skillet over medium heat. Add the ground beef and Italian sausage. Cook until browned and fully cooked, breaking it into small pieces as it cooks. Season lightly with salt and pepper.
  • Once the meat is cooked, drain excess grease if needed, but leave a little for flavor.

Step 3: Add Pepperoni and Garlic

  • Stir in the pepperoni slices and minced garlic. Cook for 1–2 minutes, just until the pepperoni releases some oil and the garlic becomes fragrant. This step builds that classic pizza flavor.

Step 4: Sauce It Up

  • Pour in the marinara or pizza sauce. Add Italian seasoning and red pepper flakes if using. Stir well and let the sauce simmer gently for about 5 minutes. Taste and adjust seasoning.

Step 5: Combine with Tortellini

  • Add the cooked tortellini directly into the skillet. Gently fold everything together so the pasta is fully coated in sauce and meat. Lower the heat to medium-low.

Step 6: Cheese Time

  • Sprinkle mozzarella, provolone, and Parmesan evenly over the top. Cover the skillet and let the cheese melt for 3–5 minutes until gooey and irresistible.

Step 7: Serve

  • Remove from heat. Garnish with herbs or extra pepper flakes if you like. Serve hot and enjoy every cheesy bite.
