Ingredients
  

  • 2 cups cucumbers sliced or chopped
  • 2 cups ripe tomatoes chopped
  • 150 g feta cheese cubed or crumbled
  • 1/4 cup red onion thinly sliced
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon fresh lemon juice
  • 1/2 teaspoon dried oregano or fresh if available
  • Salt to taste
  • Black pepper to taste

Optional additions:

  • 1/4 cup olives black or kalamata
  • Fresh parsley for garnish

Instructions
 

Step 1: Prepare the Vegetables

  • Wash and chop the cucumbers and tomatoes into bite-sized pieces. Slice the red onion thinly so it blends nicely into the salad.

Step 2: Make the Dressing

  • In a small bowl, mix olive oil, lemon juice, oregano, salt, and black pepper. Stir well until combined.

Step 3: Combine Everything

  • In a large bowl, add cucumbers, tomatoes, onion, and feta cheese. Pour the dressing over the salad.

Step 4: Toss Gently

  • Mix everything gently so the feta doesn’t break too much. You want chunks, not crumbs.
