Ingredients
  

  • 2 cups fresh spinach finely chopped
  • 1 cup feta cheese crumbled
  • 1/2 cup grated mozzarella cheese
  • 1/3 cup all-purpose flour
  • 1 large egg
  • 2 tablespoons olive oil
  • 2 cloves garlic minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon salt
  • 1 tablespoon sesame seeds optional

Instructions
 

Step 1: Prepare the oven

  • Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper so the crisps don’t stick and clean-up stays easy.

Step 2: Chop the spinach

  • Place the fresh spinach on a cutting board and chop it finely. This helps it mix evenly into the batter and ensures each crisp gets a little green goodness.

Step 3: Mix the base

  • In a large bowl, combine chopped spinach, crumbled feta, mozzarella cheese, and minced garlic.

Step 4: Add the binders

  • Add the egg, olive oil, and flour to the bowl. Sprinkle in oregano, black pepper, and salt.

Step 5: Stir everything together

  • Mix the ingredients until everything is evenly combined. The mixture should hold together easily when scooped.

Step 6: Shape the crisps

  • Using a spoon or small cookie scoop, place small mounds of the mixture onto the prepared baking sheet. Gently flatten them slightly to create crisp rounds.

Step 7: Add sesame seeds

  • Sprinkle sesame seeds on top if using. They add a light nutty crunch.

Step 8: Bake

  • Bake for 16–18 minutes or until the edges turn golden and slightly crispy.

Step 9: Cool slightly

  • Let the crisps rest for about 5 minutes before serving so they firm up slightly.
