Ingredients
  

  • 4 boneless skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 large onion sliced
  • 1 red bell pepper sliced
  • 1 yellow bell pepper sliced
  • 2 –3 cloves garlic minced
  • 1 –2 chipotle peppers in adobo sauce adjust to taste
  • 1 teaspoon smoked paprika
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon salt or to taste
  • 1/4 teaspoon black pepper
  • 1/2 cup chicken broth
  • 1 tablespoon lime juice
  • Fresh cilantro chopped, for garnish

Instructions
 

Step 1: Prep the Chicken

  • Pat the chicken breasts dry and season both sides with salt, pepper, smoked paprika, and chili powder. This helps build a flavorful crust when seared.

Step 2: Sear the Chicken

  • Heat olive oil in a large skillet over medium-high heat. Sear the chicken breasts for 3–4 minutes per side until golden brown. Remove the chicken and set aside.

Step 3: Cook the Vegetables

  • In the same skillet, add onions and bell peppers. Sauté for 4–5 minutes until softened. Add minced garlic and cook for another minute until fragrant.

Step 4: Prepare the Diablo Sauce

  • In a blender or food processor, combine the sautéed vegetables, chipotle peppers, chicken broth, lime juice, and a pinch of salt. Blend until smooth.

Step 5: Simmer the Chicken in Sauce

  • Return the chicken to the skillet and pour the blended sauce over it. Reduce heat to low, cover, and simmer for 10–12 minutes until the chicken is cooked through and tender.

Step 6: Garnish and Serve

  • Sprinkle fresh chopped cilantro over the chicken and serve hot. This dish pairs wonderfully with rice, tortillas, or roasted vegetables.

  • Don’t skip searing the chicken—it locks in juices and adds flavor.
