Ingredients
  

  • 1 cup long-grain white rice
  • 1 cup dried brown lentils rinsed
  • 2 cups vegetable broth
  • 1 cup crushed tomatoes
  • 1 small onion finely diced
  • 3 cloves garlic minced
  • 1 tablespoon olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • ½ teaspoon chili powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ cup corn kernels
  • ½ cup diced bell pepper
  • 2 tablespoons chopped fresh cilantro
  • Juice of ½ lime

Instructions
 

Step 1: Sauté the Aromatics

  • Heat olive oil in a large skillet over medium heat. Add the diced onion and cook until it becomes soft and fragrant. Stir in the minced garlic and let it cook for about 30 seconds until aromatic.

Step 2: Toast the Rice

  • Add the rice to the skillet and stir constantly for 2–3 minutes. Toasting the rice lightly gives the dish a deeper flavor and helps the grains stay fluffy.

Step 3: Add the Lentils and Spices

  • Stir in the rinsed lentils along with cumin, smoked paprika, chili powder, salt, and black pepper. The spices should coat the rice and lentils, releasing their warm aroma.

Step 4: Pour in the Liquids

  • Add crushed tomatoes and vegetable broth. Stir everything together and bring the mixture to a gentle simmer.

Step 5: Simmer the Dish

  • Reduce the heat to low and cover the pan. Let the rice and lentils cook for about 25 minutes until both are tender and most of the liquid is absorbed.

Step 6: Add Vegetables

  • Stir in the corn and diced bell pepper. Continue cooking for another 5 minutes so the vegetables soften slightly while keeping their color and freshness.

Step 7: Finish with Lime and Herbs

  • Turn off the heat and stir in chopped cilantro and fresh lime juice. This final step brightens the entire dish and balances the warm spices.

Step 8: Fluff and Serve

  • Use a fork to gently fluff the rice and lentils before serving. The texture should be light but hearty, with each grain separate.
