Equipment

  • Large mixing bowl
  • Whisk
  • Non-stick skillet or griddle
  • Small cookie scoop or tablespoon
  • Spatula
  • Measuring cups and spoons.

Ingredients

  • 1 cup all‑purpose flour
  • 1 tablespoon sugar
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup milk
  • 1 large egg
  • 2 tablespoons melted butter
  • 2 tablespoons maple syrup plus more for serving
  • 1 cup cooked breakfast sausage crumbled
  • 3/4 cup shredded cheddar cheese

Optional Ingredients:

  • Pinch of cinnamon
  • Cooked bacon bits instead of sausage
  • American or Colby‑Jack cheese

Instructions

Step 1: Mix the Pancake Batter

  • In a large bowl, whisk together flour, sugar, baking powder, and salt. Add milk, egg, melted butter, and maple syrup, whisking until smooth. The batter should be pourable but thick.

Step 2: Fold in the Fillings

  • Gently fold in the cooked sausage and shredded cheese. You want even distribution so every bite gets a little of everything.

Step 3: Heat the Skillet

  • Heat a non‑stick skillet or griddle over medium‑low heat and lightly grease it. Proper heat ensures golden outsides without burning.

Step 4: Cook the Mini Bites

  • Scoop small portions of batter onto the skillet. Cook for 1–2 minutes per side, until bubbles form and the bottoms are golden. Flip gently and cook until set.

Step 5: Serve Warm

  • Transfer to a plate and keep warm while you finish cooking the remaining batter. Serve with maple syrup for dipping — trust me.
