- 2 tablespoons Olive oil
- 1 large Yellow onion diced
- 4 cloves of garlic minced
- Carrots – 4 medium sliced into chunks
- 4 medium Potatoes peeled and cubed
- 2 stalks Celery sliced
- 4 cups Beef broth
- 2 tablespoons Tomato paste
- 1 tablespoon Worcestershire sauce
- 2 Bay leaves
- 1 teaspoon dried thyme
- 1½ teaspoons Salt or to taste
- 1 teaspoon Black pepper
Optional Add-Ins
- 1 cup frozen peas stir in at the end
- 1 tablespoon soy sauce for deeper umami
- 1 teaspoon smoked paprika for warmth
