Ingredients
  

  • 1/2 cup unsalted butter
  • 2 cups heavy cream
  • 2 cloves garlic minced
  • 1 1/2 cups freshly grated Parmesan cheese
  • 1/2 teaspoon salt adjust to taste
  • 1/4 teaspoon black pepper
  • Optional: pinch of nutmeg

Instructions
 

Step 1: Melt the Butter

  • In a medium saucepan over medium heat, melt the butter gently. Don’t rush this. You want it melted, not browned.

Step 2: Add Garlic

  • Add the minced garlic to the butter and sauté for about 30 seconds, just until fragrant. Stir constantly. Garlic burns quickly, and burnt garlic will ruin the sauce.

Step 3: Add the Cream

  • Pour in the heavy cream and stir well. Bring the mixture to a gentle simmer, not a boil. Reduce the heat slightly and let it simmer for about 5 minutes, stirring occasionally.
  • This step thickens the sauce naturally.

Step 4: Add the Cheese

  • Lower the heat and slowly add the grated Parmesan cheese, a handful at a time, whisking constantly until fully melted and smooth.
  • Do not rush this step. Low heat is key.

Step 5: Season

  • Add salt, black pepper, and a pinch of nutmeg if using. Taste and adjust seasoning as needed.

Step 6: Serve Warm

  • Remove from heat and serve immediately as a dipping sauce. If it thickens too much, stir in a splash of warm cream to loosen it.
