- 4 salmon fillets about 5–6 oz each, skin on or off
- 2 tablespoons olive oil divided
- 1 tablespoon unsalted butter optional, for richness
- 3 cloves garlic minced
- 1 cup dry orzo pasta
- 2 1/2 cups chicken or vegetable broth
- Zest of 1 large lemon
- Juice of 1 large lemon about 3 tablespoons
- 1/4 teaspoon red pepper flakes optional
- Salt to taste
- Freshly ground black pepper to taste
- 1/3 cup freshly grated Parmesan cheese optional
- 2 tablespoons fresh parsley or dill chopped (optional garnish)
Step 1: Season and Sear the Salmon
Pat the salmon dry and season generously with salt and pepper. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Place the salmon in the pan and let it cook undisturbed for 3–4 minutes, until golden and crisp. Flip and cook another 2 minutes, then remove to a plate—the aroma alone will make you hungry.
Step 2: Build the Flavor Base
Lower the heat to medium and add the remaining olive oil (and butter, if using). Stir in the garlic and red pepper flakes. Cook just until fragrant—about 30 seconds. You’re looking for that warm, garlicky smell without any browning.
Step 4: Simmer with Broth and Lemon
Pour in the broth, lemon zest, and lemon juice. Stir well, scraping up any browned bits from the bottom of the pan. Bring to a gentle simmer and cook for 8–10 minutes, stirring occasionally, until the orzo is tender and creamy.
