Ingredients
  

For the Fish

  • 4 cod fillets about 6 oz each
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper

Parmesan Crust

  • 1/2 cup grated Parmesan cheese
  • 1/2 cup panko breadcrumbs
  • 2 tablespoons melted butter
  • 2 cloves garlic minced
  • 1 teaspoon lemon zest
  • 1 tablespoon chopped fresh parsley
  • 1/2 teaspoon paprika

  • Lemon wedges

Instructions
 

Step 1: Preheat the Oven

  • Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease a baking dish.

Step 2: Prepare the Cod

  • Pat the cod fillets dry with paper towels. This helps the crust stick better and allows the fish to bake properly.
  • Place the fillets on the prepared baking sheet. Drizzle with olive oil and season with salt and black pepper.

Step 3: Make the Parmesan Crust

  • In a mixing bowl, combine the grated Parmesan cheese, panko breadcrumbs, melted butter, minced garlic, lemon zest, parsley, and paprika.
  • Mix everything together until the breadcrumbs are evenly coated and the mixture resembles a slightly crumbly topping.

Step 4: Add the Topping

  • Spoon the Parmesan mixture evenly over each cod fillet. Gently press the crust onto the fish so it sticks.

Step 5: Bake the Fish

  • Place the baking sheet in the oven and bake for 15–18 minutes.
  • The fish should be opaque and flaky, and the topping should be golden brown and crisp.

Step 6: Serve

  • Remove the fish from the oven and let it rest for 2 minutes.
  • Serve with fresh lemon wedges and a sprinkle of parsley.
