Step 1: Season the Chicken

  • Pat the chicken breasts dry with paper towels. Season both sides generously with salt, pepper, Italian seasoning, and paprika. This simple step helps build flavor from the very beginning.

Step 2: Sear Until Golden

  • Heat olive oil in a large skillet over medium-high heat. Add the chicken and cook for about 5–6 minutes per side until golden brown. The kitchen should start to smell wonderfully savory at this point. Remove the chicken and set aside.

Step 3: Build the Flavor Base

  • In the same skillet, melt the butter and add minced garlic. Cook for about 30 seconds until fragrant. Stir constantly so the garlic doesn't burn.

Step 4: Blend the Roasted Peppers

  • Place the roasted red peppers and chicken broth in a blender. Blend until smooth and silky. The color should turn into a beautiful deep orange-red.

Step 5: Create the Sauce

  • Pour the blended pepper mixture into the skillet with the garlic. Add the heavy cream and stir gently. Let the sauce simmer for about 3–4 minutes until slightly thickened.

Step 6: Add Parmesan Magic

  • Stir in the grated Parmesan cheese slowly. As it melts, the sauce will become creamy and rich with a slightly nutty aroma.

Step 7: Return the Chicken

  • Place the chicken back into the skillet, spooning the sauce over the top. Simmer for another 8–10 minutes until the chicken is fully cooked and tender.

Step 8: Finish with Fresh Herbs
