  • Measuring cups and spoons.
  • Kitchen scale (optional but helpful)
  • Baking tray
  • Parchment paper
  • Cookie scoop or tablespoon
  • Cooling rack

Ingredients

For the Peanut Butter Dough:

  • 1 cup 240g creamy peanut butter
  • 1/2 cup 113g unsalted butter, softened
  • 3/4 cup 150g brown sugar
  • 1/4 cup 50g granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup 125g all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

For the Brownie Swirl:

  • 1/2 cup 113g unsalted butter, melted
  • 3/4 cup 150g granulated sugar
  • 1/3 cup 40g unsweetened cocoa powder
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup 65g all-purpose flour
  • 1/4 teaspoon salt
  • Optional: 1/4 cup chocolate chips for extra richness

Instructions

Step 1: Preheat and Prepare

  • Preheat your oven to 175°C (350°F). Line your baking tray with parchment paper. Set aside.

Step 2: Make the Peanut Butter Dough

  • In a large bowl, cream together the softened butter and peanut butter until smooth and creamy. Add brown sugar and granulated sugar. Beat until light and fluffy.
  • Add the egg and vanilla extract. Mix until fully combined.
  • In a separate bowl, whisk flour, baking soda, and salt. Gradually add dry ingredients to the wet mixture. Mix until just combined. Do not overmix.
  • Set aside.

Step 3: Prepare the Brownie Batter

  • In a medium bowl, whisk melted butter and sugar together. Add cocoa powder and mix until smooth and glossy.
  • Add the egg and vanilla extract. Whisk again.
  • Stir in flour and salt. Mix until you have a thick, shiny brownie batter.
  • If using chocolate chips, fold them in gently.

Step 4: Create the Swirl

  • Scoop about one tablespoon of peanut butter dough and one teaspoon of brownie batter. Place them side by side on your baking tray.
  • Using a toothpick or the tip of a knife, gently swirl them together. Do not fully mix. You want visible streaks of both batters.
  • Repeat with remaining dough.

Step 5: Bake

  • Bake for 12–14 minutes. The edges should be lightly golden, and the centers should look slightly soft.
  • Do not overbake. They will continue to set as they cool.

Step 6: Cool

  • Let the cookies rest on the tray for 5 minutes. Then transfer to a cooling rack.
  • Enjoy warm for maximum gooey texture.
