Meatloaf Mixture
- 2 pounds ground beef 80/20 works great for juiciness
- 1 cup diced onion
- 1 cup diced green bell pepper
- 1 cup diced mushrooms optional but adds depth
- 3 cloves garlic minced
- 1 tablespoon Worcestershire sauce
- 1 teaspoon kosher salt
- 1 teaspoon black pepper
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- 2 eggs beaten
- 3/4 cup breadcrumbs
- 1/2 cup milk
Cheese Layer
- 6 –8 slices provolone cheese
- OR 1.5 cups shredded provolone or mozzarella
Topping
- Extra provolone slices
- Fresh parsley optional
Step 1: Preheat and Prepare
Step 2: Saute the Veggies
Heat a skillet with a splash of oil. Add onions, peppers, and mushrooms. Cook until they soften and become slightly sweet, about 6–8 minutes. Add garlic for the last minute. Set aside to cool slightly.
Step 3: Mix the Meatloaf
In a large bowl, add the ground beef, Worcestershire sauce, salt, pepper, onion powder, garlic powder, breadcrumbs, milk, eggs, and the cooked veggies. Mix gently with your hands—don’t overwork it or your meatloaf will become dense.
Step 5: Bake
Bake for about 50–55 minutes, or until the internal temperature reaches 160 degrees F.
For maximum cheesiness, add provolone slices on top during the last 10 minutes of baking.
