Ingredients
  

For the Dough

  • 4 cups all-purpose flour
  • 1 cup warm milk
  • 1/3 cup butter melted
  • 1/4 cup sugar
  • 2 1/4 tsp active dry yeast 1 packet
  • 2 large eggs
  • 1 tsp salt

For the Filling

  • 1 1/2 lbs ground beef
  • 1 medium onion diced
  • 4 cups shredded cabbage
  • 2 cloves garlic minced
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 tbsp Worcestershire sauce optional but delicious
  • 1 tbsp vegetable oil for sautéing

Instructions
 

Step 1: Make the Dough

  • In a large mixing bowl, combine warm milk, sugar, and yeast. Let it rest for about 5 minutes until the mixture becomes foamy.
  • Add melted butter, eggs, and salt. Whisk gently.
  • Gradually add flour, mixing until a soft dough forms.
  • Knead the dough on a lightly floured surface for 5–7 minutes until smooth.
  • Place dough in a greased bowl, cover with a clean towel, and let rise for about 1 hour or until doubled.

Step 2: Prepare the Filling

  • Heat oil in a skillet over medium heat.
  • Add diced onions and cook until translucent.
  • Add ground beef, breaking it apart as it browns.
  • Stir in garlic, shredded cabbage, salt, pepper, and Worcestershire sauce.
  • Cook until the cabbage softens and the flavors meld—about 10 minutes.
  • Set aside to cool slightly.

Step 3: Assemble the Bierocks

  • Preheat oven to 375°F (190°C).
  • Punch down the dough and divide into 12 equal pieces.
  • Roll each piece into a circle, about 5 inches wide.
  • Spoon filling into the center of each dough circle.
  • Fold edges up and pinch tightly to seal.
  • Place seam-side down on a lined baking sheet.

Step 4: Bake

  • Bake for 20–25 minutes, until golden brown.
  • Brush tops with a little melted butter if you want extra shine.
  • Let cool slightly before serving.
