Step 1: Cook the Beef

  • Start by heating your large pot over medium heat. Add the ground beef and cook until browned, breaking it apart as it cooks. Once done, drain any excess grease and set the beef aside.

Step 2: Sauté the Vegetables

  • In the same pot, melt the butter and add chopped onions, carrots, and celery. Cook for about 5–7 minutes until softened and fragrant. This step builds the base flavor of your soup.

Step 3: Add Potatoes and Broth

  • Add the diced potatoes and pour in the chicken broth. Bring everything to a gentle boil, then reduce the heat and let it simmer until the potatoes are fork-tender, about 10–12 minutes.

Step 4: Make the Roux

  • In a small saucepan, melt butter and whisk in the flour. Cook for 1–2 minutes until it turns slightly golden. Slowly whisk in the milk, stirring constantly to avoid lumps. Cook until thickened.

Step 5: Combine Everything
