Ingredients
  

For the Base:

  • 1 can 15 oz black beans, drained and rinsed
  • 1 can 15 oz black-eyed peas, drained and rinsed
  • 1 cup corn kernels fresh, canned, or frozen
  • 1 cup cherry tomatoes diced
  • 1/2 red onion finely chopped
  • 1 bell pepper diced (any color)
  • 1/4 cup fresh cilantro chopped
  • 1 avocado diced (optional but recommended)

For the Dressing:

  • 1/4 cup olive oil
  • 2 tablespoons lime juice
  • 2 tablespoons red wine vinegar
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Optional extras:

  • 1/2 teaspoon chili flakes for heat
  • 1 teaspoon cumin for earthy depth
  • 1 tablespoon chopped jalapeños for extra zing

Instructions
 

Step 1: Prepare the ingredients

  • Chop all vegetables into small, even pieces. Uniform pieces ensure a balanced mix of flavors and textures in every bite.

Step 2: Combine the base

  • In a large mixing bowl, add black beans, black-eyed peas, corn, tomatoes, onion, bell pepper, and cilantro. Toss lightly to combine.

Step 3: Make the dressing

  • In a small bowl or jar, whisk together olive oil, lime juice, red wine vinegar, sugar, salt, and black pepper until well combined. If you like a bit of heat, add chili flakes or jalapeños at this stage.

Step 4: Toss everything together

  • Pour the dressing over the mixture in the large bowl. Gently fold everything together until the beans and vegetables are evenly coated. Be careful not to mash the avocado if you’re adding it.

Step 5: Add avocado

  • Gently fold in diced avocado for creamy texture. This step is optional but adds a beautiful richness.

Step 6: Chill and serve

  • Let the cowboy caviar sit for at least 15–20 minutes in the refrigerator. This resting time allows the flavors to meld beautifully. Serve chilled or at room temperature with tortilla chips, as a side, or even as a topping.
