Step 1: Prepare the Pork Chops

  • Start by seasoning the pork chops with salt, pepper, and paprika. If you want deeper flavor, sear them in a skillet with olive oil for 2–3 minutes per side. While this step is optional, it adds a lovely caramelized flavor that enriches the final dish.

Step 2: Layer Ingredients in the Crockpot

  • Place chopped onions and garlic at the bottom of your slow cooker. Layer the pork chops on top, then pour the cream of mushroom soup over the meat. Add chicken broth and sprinkle thyme or Italian seasoning evenly. The layering allows the pork to soak up all the flavor as it cooks.

Step 3: Slow Cook

  • Cover and cook on low for 4 hours. If using bone-in pork chops, you may need to extend the time by 30–60 minutes. Slow cooking allows the pork to become tender while the flavors meld into a rich, creamy sauce.

Step 4: Optional Sauce Thickening

  • For a thicker gravy, remove the pork chops and stir in a slurry made from 1 tablespoon cornstarch mixed with 2 tablespoons cold water. Cook on high for 10–15 minutes until the sauce reaches your desired consistency.
