Ingredients
  

For the Filling:

  • 1 pound ground beef or shredded chicken
  • 1 small onion finely chopped
  • 2 cloves garlic minced
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • Salt and pepper to taste
  • For the Sauce:
  • 2 cups enchilada sauce store-bought or homemade

For Assembly:

  • 8 small flour or corn tortillas
  • 2 cups shredded cheddar or Mexican blend cheese
  • 1/2 cup sour cream optional
  • Fresh cilantro for garnish

Instructions
 

Step 1: Cook the Filling

  • Heat a large skillet over medium heat. Add the ground beef and cook until browned, breaking it apart as it cooks. Once the meat is nearly done, stir in the chopped onions and garlic. Cook until the onions become soft and translucent.

Step 2: Add the Seasoning

  • Sprinkle in chili powder, cumin, salt, and pepper. Stir everything together so the spices coat the meat evenly. This step is where the flavor really builds.

Step 3: Prepare the Baking Dish

  • Pour a thin layer of enchilada sauce into the bottom of your baking dish. This prevents sticking and adds moisture.

Step 4: Fill the Tortillas

  • Take each tortilla and spoon a portion of the filling into the center. Add a little shredded cheese, then roll it tightly.

Step 5: Arrange the Enchiladas

  • Place each rolled tortilla seam-side down into the baking dish. Line them up snugly next to each other.

Step 6: Add Sauce and Cheese

  • Pour the remaining enchilada sauce evenly over the tortillas. Sprinkle generously with shredded cheese.

Step 7: Bake Until Bubbly

  • Place the dish in a preheated oven at 375°F (190°C). Bake for 25–30 minutes, or until the cheese is melted and bubbling.

Step 8: Rest and Garnish

  • Let the enchiladas rest for about 5–10 minutes before serving. Top with sour cream and fresh cilantro.

Notes

  • Warm tortillas before filling to prevent cracking
  • Don’t overfill—keep it neat and easy to roll
  • Use enough sauce to keep everything moist
  • Bake until just bubbly to avoid dryness
